Martín Berasategui, a chef with several Michelin stars, collaborates with El Dulze to devise ways to bring out all the great flavour and culinary potential of this exotic variety.

Based in San Javier, Murcia, El Dulze is a family business, founded by José Ángel Sánchez, dedicated to the cultivation and packaging of fresh vegetables. Its range of lettuces includes the slightly bitter-tasting mini romaine, which is very resistant to high temperatures and available year-round. Another variety is the crisp, stable Finstar lettuce, which is early ripening and has good temperature-tolerance. The Asian vegetable range includes the brassica Choy Sum. This Chinese cabbage has a tender and crunchy texture and a similar taste to broccoli, while edible yellow flowers give it a spicy touch.
