El Dulze, cordon bleu recipes to promote Choy Sum
Based in San Javier, Murcia, El Dulze is a family business, founded by José Ángel Sánchez, dedicated to the cultivation and packaging of fresh vegetables. Its range of lettuces includes the slightly bitter-tasting mini romaine, which is very resistant to high temperatures and available year-round. Another variety is the crisp, stable Finstar lettuce, which is early ripening and has good temperature-tolerance. The Asian vegetable range includes the brassica Choy Sum. This Chinese cabbage has a tender and crunchy texture and a similar taste to broccoli, while edible yellow flowers give it a spicy touch. Martín Berasategui, a chef with several Michelin stars, collaborates with El Dulze to devise ways to bring out all the great flavour and culinary potential of this exotic variety.
